Use What You Got: Cassava Fries

I cooked up a quick batch of Cassava (aka yucca, aka manioc) fries last night to go a long with some scrambled eggs.  Wow so delicous - and much easier to crisp up than potato fries.

I used one chunk of frozen cassava that my mom left in my freezer.  I defrosted it in the microwave and cut it into frie-like pieces. With a few tablespoons of canola oil in the cast iron pan, I fried them into delicousness. 

There was a little bit of chipotle in adobo in the fridge so I squerted a couple of tablespoons of ketchup over that and mashed it all togther.  Chipotle ketchup with cassava fries I will be eating you again very soon. Perhaps tonight.
