Jotting this down here so I can remember to make it again. This is one of my improvisational recipes that was so yummy and simple. I'm limiting grocery shopping for the time being and this has been a great spark to my creativity in the kitchen.
grate ~2lbs of peeled butternut squash and sweet potato and 1 inch of ginger
heat saute pan with a pat of butter and some olive oil
add grated veggies to the pan and saute for 5 minutes
add flourishes as desired: cinnamon, dried cranberries, pumpkin seeds
season with kosher or sea salt
mix leftovers with couscous for a quick and satisfying bowl of goodness
