Quinoa pilaf with black beans, sweet potato and smoked turkey

Ingredients
- 1 C Quinoa
- 1 small onion, medium dice
- 1 can black beans
- 1 smoked turkey wing, meat taken off bone and chopped
- 1 small sweet potatoe, medium jullien sliced on mandolin
- 1/2 tsp cumin
- 1/8 tsp red chili flake
- 1 C water
- In a skillet over medium heat saute onions in olive oil for 3 minutes then add quinoa, two grinds of salt, cumin and red chili flake.
- Microwave sweet potatoes for 2 minutes to par-cook or add along with quinoa and spices to pot.
- When onions are translucent add water, stir and put the lid on for 10 minutes.
- Add smoked turkey, par-cooked sweet potato and canned black beans to the pot and simmer for another 10 minutes or until the white quinoa germ spirals are visible.
- Adjust salt and serve.
