MMMM....Paella. I followed Tyler Florence's recipe for the "Ultimate Paella" (search paella on foodnetwork.com).
A few suggestions: 1) make 1/2 of what the recipe calls for....unless you have a restaurant sized skillet 2) after adding water the rice add a couple pinches of salt 3) a tip from the nice lady at Trader Joe's: pulverize the saffron with a pinch of salt and the back of a spoon 4) turn the heat way down after adding the water and cover for a few minutes so the water doesn't evaporate too quickly 5) add the shrimp where it says to add the lobster, otherwise they will overcook 6) low on cash? leave out all seafood except shrimp 7) use chicken/turkey andouille instead of chorizo (might I suggest the organic brand carried by Trader Joe's)
Make Paella this weekend. It's well worth the time and effort. Your tummy will thank you!
