For those of us who buy those Costco Sized sides of salmon, here's a grrrrreat/yummy recipe for when you run out of ways to use it all up.
Cut the side into 1.5 in wide pieces. Season simply with salt & pepper (s&p), maybe some lemon zest and oregano too.
Saute in a little olive oil (EVOO if you like).
The Sauce: plain low fat yogurt, some lemon juice to thin it out, chopped fresh basil. Season with s&p.
The Potatoes: quarter some baby potatoes. Boil for 8 minutes. Drain water out, turn heat to med-low and allow potatoes to dry a bit. Add olive oil and garlic. Season with s&p. Turn so that all sides get brown and crispy.
Garnish with a bit-o-basil and you are ready for a yummy salmon dinner.
